Our Favorite Banana Bread

This is a staple in our household - both Maverick (our one year old) and Archer (our 2.5 year old) love it - as do all the adults that get to sneak bites of it in between hungry children feedings...

Why do we love it so much?  It's full of simple ingredients, is easy to put together and the toddler even loves to help get it ready to go. Sweetened with maple syrup (we try to stay away from refined sugars as much as we can) and you can adapt as needed.

The original recipe is from Shut The Kale Up's blog - we've adapted it very slightly to suit our family's pantry (see our ingredient swaps below.)

3 ripe bananas

1/3 c melted butter (we use half coconut oil and half butter or ghee)

1/2 c maple syrup

1 egg

1 1/2 c flour (we use half white flour and half almond flour)

1 tsp vanilla 

1 tsp baking soda

pinch of salt

top with chocolate and sea salt

Preheat oven to 350

In a large bowl - whisk egg, add bananas and mash together.  Add the rest of the ingredients - mix until combined. 

Pour into loaf pan and bake 50-55 minutes. Let it cool slightly before serving.
